Beautiful book。 My attempts at the recipes have been pretty unsuccessful so far but I will persist。 Everything I’ve tried is SO sweet and complicated to make。 Chocolate sponge cake。 Didn’t have caster sugar and used raw sugar。 So the result was definitely my fault。 Sour cream glaze: Way too sweet and just bleugh。 Chocolate cookies。 Very complicated for a cookie recipe! I've made a few things out of this book now, with everything turning out perfectly - the peach polenta tart knocked my socks off。 I'm a bit of a nervous baker because I hate the idea of wasting ingredients when something doesn't turn out。 This book is perfect for me because the instructions are precise down to the gram。 I also appreciate the advice for baking fails - though I thankfully haven't yet had to take any up。This book is suited for people who take baking a bit seriously, who are able an I've made a few things out of this book now, with everything turning out perfectly - the peach polenta tart knocked my socks off。 I'm a bit of a nervous baker because I hate the idea of wasting ingredients when something doesn't turn out。 This book is perfect for me because the instructions are precise down to the gram。 I also appreciate the advice for baking fails - though I thankfully haven't yet had to take any up。This book is suited for people who take baking a bit seriously, who are able and willing to invest in quality ingredients as well as equipment like a stand mixer, thermometer and tins of various sizes and have the time and energy to follow the steps precisely。 That said, enthusiastic beginners are well catered for - the precision and straightforwardness of instructions means that there is little assumed knowledge and a high level of skill is not required。Beatrix Bakes is beautifully presented, well thought out and lovingly put together。 I'm constantly thinking about my next bakeventure! 。。。more

This is probably one of the most informative baking books I've ever read。 Who knew people were out here chilling flour so their dough would be the perfect temperature? Meringue was slightly undercooked。 Managed to roll it but it then collapsed。 :(9/4/2020 - Made the sponge cake。 30g short on egg yolk but still turned out great! Success! Somehow managed to stuff up the passionfruit glaze though。 Second time worked out。23/4/2020 - Made the cheesecake。 I think it was undercooked a tad, super soft but it is set。 DELICIOUS though。 Fairly easy and straight forward for a cheesecake。 Worth investing the time in the crumb base instead of using biscuits。16/5/2020 - Made Maple Walnut Sticky Scrolls。 DELICIOUS。 First time doing any sort of yeasted dough。 So。 DAMN。 GOOD。 The only problem is eating them all。16/8/2020 - Strawberry jewels。 Delicious。 Probably could have boiled the syrup a bit longer but it's gone well with the morning porridge。8/11/2020 - Made the Maple Walnut Sticky Scrolls again。 Fucked the dough first time by not converting the fresh yeast measurement to dry。 Second time was a charm。25/11/2020 - Made the Chocolate Bavarian Pie。 Not as chocolatey as you would think。 I'm not sure if I cooked the custard enough or if I didn't incorporate the cream and the custard together properly because there's this weird layered effect going on but it set and it tasted great。1/3/2021 - Made the Blood Plum Galette but adapted to Queen's Garnet plums。 EXCELLENT。 My dough didn't darkened as much as the picture but I think that was my weird oven so I probably needed to leave it in the oven for an extra five minutes。 The cream cheese dough was super easy for someone who has never attempted pastry before。 I also forgot the lemon because that's who I am as a person but my plums were pretty tart so I think we were okay。20/4/2021 - Made the Raspberry and Almond variation of the Lemon Curd and Pistachio cake。 It's delicious but I am never making it again。 The effort。 Was。 A lot。 Though cake part was super easy and actually fine, it was really just the stress of making meringue buttercream that destroyed me。 。。。more
